I think there used to be a list but it was lost due to some DigitalOcean forced OS update. I didn't bother to do DB backups, I still don't :P.
The mordhau game has the Spirit instance with the most custom UI that I know of [0]. I don't remember any other instance that had any visible modification.
P.D: yes, the UI needs an overhaul. It should be easier to modify basic things like element colors.
